"Putting Herbs By"

There are many ways to preserve the harvest of wild plants & cultivated herbs. Some herbs are to be dried for teas, some infused into oils, vinegar or alcohol to extract their desired phytochemistry. In this class we will discuss the methods for preserving plants as medicine, & learn what to do with the seasonal bounty in order to use it all year round. We will practice with some fresh plants, learn how to dry herbs, and make an herbal infusion.
